Went here on Mothers day and had the 5 course degustation menu with accompanying wines.
I would rate as following:
1. Ambience - boutique restaurant with only 5-6 tables. No views but décor of photos and pictures of early mining and area were interesting and were complemented with equipment from early last century. Lighting perfect. Plates heavy and tactile.
2. Service - I give the staff a perfect score. High staff/customer ratio with staff well attired and a nice combination of friendly but not "in your face". Glasses filled non-invasively. Staff gave the impression of it all being done seamlessly.
3. Food- Food was excellent but I do think the size could have been larger - even for degustation. One cracker sized object does not make a course. I have eaten in most of Sydney's 2 hat or above establishments and these were some of the smallest serves I have had. The accompanying wine choices I must say were excellent. I did prefer the whites but all were very good from the Blanc le Blanc to the sweetest of the sweet Watervale desert wines.
General: Food portions should have been slightly larger which would allay the comments of over priced - even for a fine dining experience. My thought on leaving was - not there yet but on the way.

Our family always love our meal and personalised time when we dine at Ruby's. The food is truly magnificent, the flavours and presentation are amazing. Scott and the wait staff are always extremely friendly and very professional. The food and the service is well worth the money for a truly enjoyable and memorable evening.
