Great food but it would be nice if they added seasonal specials or changed up the menu once in a while.

On my first few visits, I had high hopes for this quaint downtown Olympia restaurant. Its just far enough from the “derelict alleys” of downtown so you can enjoy Alfresco dining on a nice patio.
When I find a single item on a menu that shows great promise, I’ll often go back several times for that item and eventually stray to try other things on the menu.
The first few visits, I ordered the arugula salad. Simplicity done correctly is more complex than the common diner understands. The arugula was fresh, clean, crisp and the dressing light with good acid/sweet balance.
I followed with a pizza.
I’ve traveled far and wide to try to understand the intricacies of what makes great pizza. Most restaurants and even fewer diners have a clue about what great pizza is about.
After the first time I ordered the pizza at Mercato, I knew that with a few special requests (no raw tomato), I’d have a great pizza.
The second and third time I ate a Mercato, they nailed it and I thought I had found “my spot”.
Unfortunately, they have a grave problem with consistency and on the forth visit, the pizza was inedible. The dough was “flat” and server prematurely and worse.. it was burnt beyond recognition. They offered to prepare another and my hopes were slim but agreed. Again burnt to hell and the cook had the audacity to cut of the burnt part and serve in anyway.
On my next visit, I couldn’t bare another pizza disappointment so I ordered a pasta course.
Huge mistake, as there are few things more challenging than pizza dough and one is pasta dough. There’s not much worse than extruder pasta othe than extruder pasta done wrong and undercooked. It was worse than eating play dough. Mercato is a place for pizza, so I gave them another shot. I’ve now been there 11 times (10 Times for pizza & salad).
Six out of ten times the pizza was exceptional and four times, simply disgusting. Tonight was one of those “disgusting pizza” nights.
The wine list is quite nice and the service friendly and pleasant. I asked one of the servers who had served me several times, if this information about inconstant and terrible pizza dough gets back to the person who makes the dough or management who can guide these cooks. (No answer)
When the pizza is good, it’s really good and when it’s not good, you’re better off eating the cardboard box.

We sat at the bar to have dinner because the restaurant was busy (always a good sign!) The bartender was friendly and helpful with our drink and dinner selection. Everything on the menu sounded good. I had the gnocchi with duck and the mista salad, it was delicious!

This was my first visit in some time. I used to love Mercatos, but it has gone downhill. The pasta dishes (supposedly with shrimp and sausage) had virtually no meat. For what we got, our meal was definitely overpriced.
