What better way to end a week's worth of Food and Wine competitions here in Rochester than at our next with Bamboo Panda Catering Company. This event was being held at The Rochester Brainery's brand new location not too far from their original in Village Gate. Their new location is spectacular with ample amounts of classroom space for new lectures. The Brainery is run by one of the most influential women in Rochester named Danielle. It has been interesting over the years to see Danielle promote The Brainery, and see it expand to the monster it is now. This is a great spot to also take a bunch of hands on learning classes such as Bartending 101. The artwork around the facility complements the theme of The Brainery perfectly, as it was done by Gallery Coordinator Jason aka Tiki Barber as we called him in High School. Activities like these bring together friends to not only work together, but collaborate on a variety of ideas.
Now on to the star of the show, literally, with a Sushi class presented by Hell's Kitchen Top 5 Finalist Kimberly Roth. Kimberly got her start right here in Rochester first at California Rollin', and then working on her signature food truck Stingray SushiFusion. Now she runs a catering company called Bamboo Panda, and boy does she produce some great quality sushi. Kimberly prepared for us an enormous spread that included multiple eel, tuna, and yellow fish rolls. The cuts on all the rolls where perfect, as it was easy to pick up on your chopsticks, without the rice falling apart everywhere. The fish in the Sushi tasted extremely fresh, and I was pleasantly surprised when she excluded all the foo foo toppings keeping sushi simple and delicious. I can see why Kimberly is now one of Gordon Ramsay's TOP Chef's on the show, as she is leaving to work at one of his restaurants in a couple of weeks at Caesar's Palace in Atlanta, GA. For Gordon to ask you to work with him should be a chef top honor and accomplishment in itself. For the record she had 8 wins on Hell's Kitchen, along with 4 losses, eventually getting eliminated in 5th place. Originally, the show DID NOT want her, and told her in a round of about way that she has NO CHANCE. She defied not only people, and the odds but the producer of the show called her up 4 weeks prior last minute, and asked if she could still come down for the filming. Kimberly says, "Don't let anybody stop you from perusing the dreams and activities that you feel passionate about doing".
Learning how to roll sushi for the first time listening to Kimberly was extremely difficult, especially when you just came off a St. Patrick's Day party the night before, but by a stroke of luck I managed to roll a perfect maki roll on my first try!! This probably due to the fact I kept staring at Kim's signature neon socks that brought flashback memories of the same ones she wore on TV. This maki roll was stuffed with rice, crab meat, avocado, cucumber, a touch of mayo mixed with some hot sriracha sauce-Yummies! Joined with me where Julia Y., Lea H., Namthip H., and newbie Kayla H.; in which working as a team on making sushi made the experience pleasant. With my sushi roll getting the final stamp of approval by Kimberly Roth, I was ready to close out an incredible 2 weeks of Food and Wine events held here in the Rochester area. These events helped demonstrate the quality of cuisine that has improved dramatically over the years at local area restaurants, form fitting since our Hell's Kitchen Top Chef is from here!
Overall: Danielle from The Rochester Brainery, Kimberly Roth from Hell's Kitchen, TOP notch Sushi Rolls from Bamboo Panda Catering Co., Chopsticks and Sake Cup, TEAM work, and Making Sushi for the First Time...l Will Be Back for More Classes!!!
